This is a super basic dish, perfect for families as it requires minimal effort and definitely doesn't lack in flavour. You may be alarmed by the fact that it is literally pasta, pesto and sausages, however this can become your classic go to. The best part is that you can add different things each time you make it. Mixing in Crafty Kraut at the end gives a fresh and salty dimension. I've also had this dish with broccoli, or even kale just to get more plant points into the meal.
Ingredients (Serves 2)
Pasta (of your choice) x 120g
Sausages x 4 (I use Richmond veggie sausages)
Jar of pesto x 1 (use free-from pesto for a vegan alternative)
Crafty Kraut x 1/2 jar
Optional
Kale
Tomatoes
Broccoli
Preheat the oven to 180°C. Once hot add the sausages on a baking tray and cook for approximately 20 mins (or according to cooking instructions on the packet).
Put a medium saucepan of water onto boil. Once boiling add the pasta and cook for the appropriate time (if using fusilli or similar 10 minutes should do!).
Once al dente drain the pasta in a colander and mix through the pesto.
Cut the cooked sausages into small pieces and mix thoroughly.
Serve topped with a generous helping of Crafty Kraut and enjoy!
