I've lost count of how many times we've eaten this bad boy. There's something about the combination of gooey melted cheese with our fiery kimchi that is just... well, naughty.

With just 4 ingredients this is so simple to make and yet sooo satisfying. If you're following a #plantbased diet or don't eat dairy, vegan cheese subs work just as well

Ingredients (serves 1)
2 slices of bread (we 💚 sourdough, wholegrain or seeded)
Butter or spread, to butter bread
Extra mature cheddar cheese, grated
2tbsp Katz Kimchi (we will accept no substitutes!)
.Method
1️. Heat a frying pan on medium heat, meanwhile butter the bread on one side.
2️. Buttered side down add the grated cheese to one slice and top with Katz Kimchi.
3️. Place the other slice on top, buttered side up and press down.
4️. Place the toastie into the frying pan and cook on one side until golden brown.
5️. Flip and cook the other side until golden brown and the cheese is gorgeously gooey.
6️. Plate up, cut in two and devour.
