Ferments Fighting Food Waste

As nutritionists, we love food and appreciate the precious resources that go into producing it.

Perfectly edible food should not be going to waste which is why we want to save as much as we're able to using the preservation power of fermentation. The endless curiosity that fermentation provides drives us to explore new and innovative ways to preserve food and incorporate them as nutritious, gut-friendly additions to our diets. All we do is add a bit of salt, monitor the temperature and time and let the naturally occurring microbial cultures do the rest! 

From our beginnings when we produced in 30 litre glass bubblers to now when we craft our ferments in 150 litre stainless steel tanks we've always tried to focus on using surplus and imperfect produce. We're always trying to increase our impact and believe every little bit can make a difference.  We currently work with the charity FareShare who help us acquire surplus produce that would have otherwise been wasted. We support this charity by donating a percentage of sales back to them and their mission to end food insecurity in Wales.

Approximately 6.1 million tonnes of edible food is wasted in the UK each year...

...with 1/3 of food produced never leaving the farm (WRAP 2025). As nutritionists with long love-affairs with food we hate to see it go to waste. Fermentation allows us to preserve fresh produce, so we can enjoy it for longer.

How we fight food waste with fermentation...

How much food have we currently rescued?

As of early 2026 we've saved more than 5.5 tonnes of perfectly edible, surplus produce from being diverted to animal feed or from the bin. That's the equivalent of around 90,000 carrots! Now, this is only a tiny fraction of the amount of produce that we use in our sauerkrauts and kimchis. Connecting with when and where food is wasted is tricky, especially when we have quite tight windows that we can ferment in. But, we're always striving to increase how much we rescue and are committed to maintaining this mission!

How else do we fight food waste?

Through our brand we highlight the huge problem with food waste we have here in the UK. One main way we do this is through our in-person workshops and online courses teaching the ancient skills of fermentation. Since a huge proportion of food is wasted at the household level this provides an important skill to reduce food being wasted at home. Fermentation is a fiercely effective way of preserving fresh produce making it last signifcantly longer than it would just sat in the fridge.

Which charities do we support?

Since we began in 2019 we've made a quarterly donation to various FareShare charities (primarily in Scotland and Wales where our business has been based). FareShare helps redistribute surplus food to local communities who need it most, fighting the big problem with food insecurity we have in the UK. We donate between 1-2% of our turnover to support the incredible work they do. Since we donate a proportion of sales (not profit) you can be reassured that every jar you buy is helping make a difference!
